So, last night I found it approaching 11:30, and I was once again craving a midnight snack. I told myself that I would skim through a couple of fast and easy snack recipes online, and if nothing sounded good I would skip it. You know just go on to bed. Ha, what a joke. As I scanned just the titles of the umpteen recipes, I began to have legitimate hunger pangs.

The recipes for dips, cheese balls, granola, mixes, no bake cookies, had me mesmerized. And even if they did not have my attention, my stomach was now in the drivers seat anyway. I landed on a recipe for the worlds best nacho potato wedges. Now, this was not quite what I had intended but, they did say worlds best. So, I went for it.

Now, I want to share this delish concoction with you. Follow the directions on some store bought potato wedges, but remove them a couple of minutes early. Then smother them with shredded cheese, olives, bacon bits and jalapenos. Return them to the oven until cheese is melted. Then add any chilled items of interest such as salsa guacamole, or sour cream.

What you will get is savoury and satisfying. Maybe a little too satisfying, because I am wanting more tonight.
